NAGOYA FOOD GUIDE: MISO KATSU

Tonkatsu (豚カツ, とんかつ or トンカツ, pork cutlet), is a Japanese dish which consists of a breaded, deep-fried pork cutlet. There are two main types, fillet and loin. It is often served with shredded cabbage. In Korea, tonkatsu is known as don-gaseu (돈가스) or don-kkaseu (돈까스), which derived from a transliteration of the Japanese word.

Nagoya serves its own version of the Tonkatsu-

Initially served dry on a sizzling plate like the traditional Japanese tonkatsu

Afterwards, the salty-sweet miso sauce is poured over.

Notice the thickness of the cut and the marbling of the fat.  The fatty flavor just complements the miso glaze.

During or after cooking, the meat is typically seasoned with tare sauce or salt.[1]
