NAGOYA FOOD GUIDE: MISO KATSU
Tonkatsu (豚カツ, とんかつ or トンカツ, pork cutlet), is a Japanese dish which consists of a breaded, deep-fried pork cutlet. There are two main types, fillet and loin. It is often served with shredded cabbage. In Korea, tonkatsu is known as don-gaseu (돈가스) or don-kkaseu (돈까스), which derived from a transliteration of the Japanese word.
Nagoya serves its own version of the Tonkatsu-
Initially served dry on a sizzling plate like the traditional Japanese tonkatsu
Afterwards, the salty-sweet miso sauce is poured over.
Notice the thickness of the cut and the marbling of the fat. The fatty flavor just complements the miso glaze.

Yakitori (Japanese: 焼き鳥, literally grilled chicken) is a Japanese type of skewered chicken. The preparation of Yakitori involves skewering the meat with kushi (串), a type of skewer typically made of steel, bamboo, or similar materials. Afterwards, they are grilled over a charcoal fire. During or after cooking, the meat is typically seasoned with tare sauce or salt.
Nagoya is considered the Yakitori town of Japan.
